the popular food in Nara is "Narazuke". Using much sake lees, it has mellow smell of sake with crunchy taste, you can enjoy the unique taste of pickles. it has history for more than 1400 years. i would like to introduce the narazuke, which is staple souvenir in nara.

The history of Narazuke is old, made in Nara Prefecture as "Kasu pickles" since the 700's. In Nara, where sake making was prosperous, it started to make a preserved food by putting the vegetables in the sake lees. It was written on the wooden pipe found from Heijyo-kyo". Elegant and tasty Narazuke were treated as luxury goods at that time and have been considered as food of the upper class.
The prototype of the present Narazuke was made in the late 900s to the early 1000s. Sake making was done at Bodaiji shouryakuji temple, and putting the vegetables such as gourd into sake lees they made has now told till today.
first step is to put the gourd into salt water. when it get smaller, they put more gourds into salt water and let it stand for 4-5 months.
after that, they put into sake lees for 3-5 months. changing the sake lees for 5 times, and it takes about a year to make narazuke. with this special steps to make, you can enjoy the mellow taste of narazuke.
the best way to eat is to eat them with white rice! bitter taste of sake is good accent. the crunchiness is also nice. you can also enjoy with ochazuke.
you can also enjoy by putting them into salad, or with cheese too. you can use it for many different cuisine.
but try to avoid driving after you eaten narazuke since it has alcohol in it. sometime, people get caught for drinking and driving.
the famous shop for narazuke is "morinarazuke ten". it's a long established pickled shop near Todaiji nandaimon and nara park. the shop has gourds, ginger, and radish narazuke. please stop by on the way back.
