The history of Narazuke is old, made in Nara Prefecture as "Kasu pickles" since the 700's. In Nara, where sake making was prosperous, it started to make a preserved food by putting the vegetables in the sake lees. It was written on the wooden pipe found from Heijyo-kyo". Elegant and tasty Narazuke were treated as luxury goods at that time and have been considered as food of the upper class.

The prototype of the present Narazuke was made in the late 900s to the early 1000s. Sake making was done at Bodaiji shouryakuji temple, and putting the vegetables such as gourd into sake lees they made has now told till today.
