[Kind of Japanese sweets]
Sweets are toughly divided by three. "Confectionery", "semi-confectionery" and "dry confectionery".

"Confectionery" is a confectionery products which includes much moisture (including a 40 percent moisture or more immediately after manufacturing) and uses a bean.

There are such as Dorayaki, Uiro, Kintsuba, Sakura Mochi, Daihuku and Dango.
"Semi-confectionery" is a confectionery including 10 to 30% moisture immediately after production. It is in the middle of the sweets of confectionery and dry confectionery. Because there is less moisture compared to the confectionery, it has relatively long shelf life.

There are such as Monaka, unbaked yatsuhashi with middle-bean paste, Kanten mochi and Suhama.

"Dry confectionery" is a confectionery including moisture below 20 percent immediately after production. It has been called Higashi (Dry sweets) because of it.

There are such as Rakugan, Konpeito (Star Candy), ginger sugar, Wasanbon, rice crackers, Yatsuhashi and amanattō.
