#7 The Sannomachi Branch of Kakuichi
“Hoba miso”, which is one of the local dishes from Hida, means miso on Hoba (leaves of magnolia), and people there eat after roasting it. Hida’s miso is savory and characterized by the sweetness of koji, so we get the feeling that we can eat heartily even in hot weather when we lose our appetite! It goes exceedingly well with cooked rice and is perfect to use at home.

I also recommend “Takayama ramen” of the well-established noodle making factory “Oidaya” founded in 1901. Ultrafine wavy noodles, which are made by kneading six types of jizake (the local sake), are features of the stretch of dough. Soup is seasoned lightly with soy sauce, so you can eat it even if you have little appetite. With no preservatives, it is wonderful for us to eat it safely.
